(Science: chemistry) An aqueous solution of sodium citrate, sodium carbonate, and copper sulfate which changes from its normal blue colour to orange, red, or yellow in the presence of a reducing sugar such as glucose.

Effect of pH on amylase activity

What happens to the activity of amylase when put in a solution containig starch at pH 11? what is the simplest test to tell that starch has been converted into maltose?(i know abt the Benedicts test). thanks in advance
