Anaerobic Respiration

For my A2 coursework I need the equations for anaeroibc respiration in yeast for: Glucose, Lactose and Sucrose.

I know glucose: C6H12O6 goes to 2CO2 + 2C2H5OH

But I don't know sucrose or lactose.

Please help me.

They are exaclty the same. The yeast first breaks down lactose and sucrose into monosacharides. From sucrose 2 glucose molecules result, and from lactose, one glucose and one galactose if i remember correctly...

Thanks, but how do they break the disacharrides down, what enzymes do they use, I need to know this so I can find out what temp to keep the experiment at so they work at optimum levels.

Even easier: by hidrolysis:
for breaking lactose: lactase
for breaking sucrose: sucrase

Thanks, now I can find out optimum temps, and I should have seen the names coming. :oops:

I think you are confused when typing. 2 glucose is maltose, sucrose is fructose and glucose.

Have a look here for the value of relative sweetness. I guess the measure is measured, as for peppers with experimented tasters comparing different solutions of the sweeteners.
