amylase solution added with starch solutionif i mix 0.1% amylase solution with 1% starch solution. i got a result indicating starch, protein present but no reducing sugars. what if i wait for around 10 min, i know i won't have any starch since the amylase can break it down, so how abt protein and sugar? will they be present ??
Protein in starch solution?!
Alpha-Amalyze should break starch down into maltose sugar. Depending on the temperature you may still have starch after ten minutes.
The amylase is the protein... and since its an enzyme, hence a catalyst, what do you think its fate is?
As said the degradation of starch may not be complete... but for reducing sugars, well what do you expect from starch degradation? Patrick
