How does fat affect the digestion of carbohydrates?
Why whole milk has a lower Glycemic Index than fat-free milk?

It may not be the digestion / absorption, although that might be a factor - I would think that the process of removing the fat might remove some of the lactose as well.

I've tried to find a mechanism connecting fat content and lowered glycemic index, but have only found some vague statements about fat changing digestive chemistry.
